Others that I also listen often are the Flying Barrel, the Precipice, the Attack Run and Riding the Shell.

From the first Rayman, the ambiance and music of the Blue Mountains still sticks in my mind.
For the second, it's difficult to choose for me, just because so many of the tracks were good. I'd really say the tracks from the Sanctuary of Stone and Fire and the Whale Bay music (swimming with Carmen) stuck with me the most.
And then as for Rayman 3, the music wasn't as catchy to me, but I'd say that the songs from the Land of the Livid Dead, the Tower of the Leptys, and the Hoodoo theme have stuck with me the most. TLotLD was the one world I'd play over and over just to hear the music for.

The Reflux Battle (First) is very catchy too.
