The reason the pitch is low on the MS-DOS and DSi version of Rayman 1 is because the voice actors were going through puberty, so the Developers then drunk beer and said "Since the actors are goin' thro' puberty, why don't wa' make the voices lower pitched in this por' of the game?!?!??!?". What the hell is wrong with these developers...

Rayman didn't had limbs because he was actually a glitch in the virtual world from the SNES prototype of Rayman 1. The prototype itself ended up becoming a glitch because Ubisoft secretly asked Bethesda to work on it, and so it got scrapped and got replaced by the current Rayman 1.
