When you start Rayman 3, you do the grimace in front of André at the beginning of the game because you know Rayman can do that since Rayman 1.

When you can do the grimage at André in the beginning of Rayman 3 (witch is impossible because he only is in the movies and not in the gameplay).

Yep, I also miss Ly, Baby-Globoxes, Lums, Flying & walking shell, et cetera..
They really need to make a Rayman 4 with all that stuff..
