The characters talk normally in PSX version and talk gibberish in Dreamcast version.
There's a Ninjaws boss in PSX version in Sanctuary of Stone and Fire.
You can unlock the original Rayman 2 level in PSX version.

Ah shoot, my mind is clearly running on embers today.
I meant Rayman 1 for PS1 and Sega Saturn.
My most humble apologies for that mistake.

1 - The sky outside of Mr. Dark's castle of Candy Chateau is visible in Saturn instead of PS1
2 - The sky backgrounds of Saturn (Band Land) has got a flashing animation when compared with PS1
3 - The cages locations in Saturn are generally harder to find than in PS1

Blimey, I'm not actually sure about the cages, given the similarities between the PS1 and Saturn versions I had assumed that the cage locations were the same.
EDIT: From the gameplay footage I've seen so far, the cages seem to be in identical places to that of the PS1 version.

Hm, I know that Saturn is more renowned for it's 2d than 3d, but I can't say that I see a difference in graphical clarity.

Ok, I think I might need to reiterate, I am asking about the differences between the PS1 version and the SEGA Saturn version.
Some answers seem to show that it's writer believes I asked for the differences between the PS1 and Jaguar versions.
