There were 90 in Rayman Revolution but I'm unsure about the amount in Rayman 2.

In Rayman 2 Great Escape there are 94 , for sure, but I don't know which Version of Rayman 2 Josh meant.

Well, I'm unsure in the main versions, but In Revolution it's simply 'The Pirate Mines', and on PS1 it's Gloomy Island. But I'd say in the others it's Iron Mountains, as Spiral said. But again, you should specify version, they are mostly simila but the PS1 version and Revolution have many differences.
