Real-life:

• He was difficult to animate with limbs.

In-universe (according to the Rayman Origins manual)

• The nymphs were distracted by Zombie Chickens;
• Some Lums (which were needed for the creation) jumped off a cliff while chasing the Zombie Chickens.

Technically two there, Decidetto, your second and third reasons are linked.
I think Rulez's answer was satisfactory.

If you're talking from a story point, then I'd suppose canon would be important unless stated otherwise.
