In Rayman 1: Band Land, Picture City, and The final boss battle with Mr. Dark in the Candy Chateau (if that counts). In Rayman Origins: Gourmand Land, Ticklish Temples, and Lucious Lakes. Possibly, The Moody Clouds and Mystical Pique as well.

Alrighty, let's see, Jibberish Jungle (Though it does contain sections where you are capable of swimming, it isn't a dedicated section), Desert of Digeridoos, Gourmand Land (Though again, there are areas where Rayman can swim, but not dedicated), Mystical Pique, Moody Clouds, Land Of the Livid Dead, Grumbling Grotto.
