Everything can be canon if you stop being lazy and do some thinking. Even Rayman Arena.

I like to think that Rayman Adventures is canon, but not part of the main series. It's simply a spin-off.
As for Rayman M/Arena... I don't know. The characters and the areas it introduced could be canon, but the game itself is highly unlikely to be. Razorbeard really isn't the type of character to fight on his own. Besides, he flew away at the end of R2 and I doubt the other inhabitants of the Glade would like to have him around just for some friendly challenges.

What's the difference? They're all games in the series. And I don't think the developers intend it to be a spin-off.

Razorbeard has appeared several times after the end of Rayman 2. In addition to this game, he was also in R3 GBA as the main antagonist, R3 console as an Easter egg (though whether this is actually him or a statue is uncertain), the TV series, and in Rayman Kart as a playable character. He's still around.
Just imagine that Razorbeard and two of his henchmen (and his wife) challenged Rayman to a race/battle tournament shortly after the events of Rayman 2, for reasons related to defending his honor. Or you could reason that Arena and Kart both take place after these other games, and the Robo-Pirates have been reprogrammed to be cooperative. There are multiple ways of working it in without wholly rejecting its relevance to the lives of these characters.
In any case, writing any game off as "not canon" in a series like this is lazy and unfounded. It's not like this is Star Wars with a creator-enforced strict storyline and order of events; it's much more malleable than that, and we can use this to our advantage instead of attempting to force the circular Rayman world into a square-shaped hole. Everything is canon if you wank on it a little.

I personally consider it a spin-off because it barely introduces anything new. All the other Rayman games have been very different from the previous ones (more or less). Almost everything we see in the game was shown in Legends. Dunno, it just looks too cheap to be counted as a major title.
It's unlikely for the Easter egg in R3 to signify anything important, especially if you consider that it's made to resemble The Last Supper painting. It's nothing more than an Easter egg. The TV series is the farthest you can get from the canon Rayman. Not to mention that it was cancelled after the 4th episode. Rayman Kart is even less likely to be canon than Rayman Arena. If R3 GBA is canon, then it just proves my point that Razorbeard wouldn't attack in a friendly manner or by himself, but would rather use other Robo-pirates to do his job.
The thing with Rayman Arena is that it's just a party game. Good guys fight bad guys and vice versa, bad guys fight bad guys, good guys fight good guys. The game isn't supposed to show anything like "the good fighting the evil". The characters are doing what they are doing just for fun. This is why it's highly unlikely that Razorbeard and his allies would do something like this.
Again, I'm not saying that everything the game has shown should be ignored. The characters and the locations could be canon, but all the sporting competitions going on... I just can't see it fitting.

The more I play this game, the more I really don't understand the whole pirate theme (if you could even call it that) I mean, I like Rayman's costume, but the captain is like some fat ginger who resembles a pirate as much as Rayman does, who just dumps Rayman miles away from the egg in a viking longboat cause he's a mad cunt?
Also, the waiting times for the eggs are alright cause I just play it on occasion, but why not have multiple baskets??

1) Don't question the Captain. He's a bit screwy.
2) It's not much of a pirate theme, but rather an Adventure theme. Look at Globox's costume for instance, he dons a similar outfit of another famous adventurer. Also pirates = adventure, duh.
3) Multiple Baskets are a great idea! But not for the Devs.
