The answer was First Ruins and Nebulous Tower. Haunted Yard isn't even a race level.

Sssam appears as a statue adorning one of the rooms in Razoffs Mansion.

I think it was fart grenades which they throw and they "explode" into fire, a flamethrower, and maybe the hook thrust?

I'm not sure about the hook attack, but definitely a flamethrower and at long range the gas bombs.

If I remember well, all the Henchman models can perfectly attack Rayman with their hooks if he gets too close from them. Rulez got it for sure.
