Plums in the third game don't bounce endlessly, and seem to be heavier.
Plums in the second game can be put into water, in the third game, the plum will be destroyed if done so.
Plums in the second game are mostly used to traverse terrain that wouldn't be otherwise traversable, in Rayman 3, they're merely used to create platforms by putting them onto a pike.

In Rayman 1, the plums bounce endlessly, while in R3 they don't.
In Rayman 3 they can be used to kill enemies ( like slapdashes as far as i remember ), while in R1 they can only be used to stick them on the livinstones' heads.
In Rayman 3 they get destroyed on contact with water, while in R1 you can use them to ride on them while they're in water.
In Rayman 3 they can only be found on Plum tress, while in R1 they can be found anywhere.

Actually, I'll add an explanation.
1. Green gem do in fact appear in TFC
2. Reflux simply can be beaten without powerups
3. Sylkins only appear in CF and TBOM
4. They can in fact be killed by jumping and shooting, although this takes some patience

I would also like to note that the part after Reflux's battle in TDOK is the only situation that you can hit a Hoodstormer frontally without he flying away. (The vertical group, not the last one before the Doctor)

That's true, but I would consider that to be because they're being blocked (by other Hoodstormers).
