No it's not. I'm pretty sure 'Raymanian' was actually a setting in the options menu, despite it not being an actual nationality.

Personally I'm not so kean on calling them Rays, or even Raymanians. I mean, everything doesn't have to circulate around Rayman himself, does it?

As long as you don't think 'Raymanian' is the official language in Rayman's world, then i'm happy.

Then why do subtitles appear when they speak it?
