Hey Haruka, I just completely set up Rayman on DOSbox, it was a little bit more tricky than I remember. Even though I have Rayman Collector, I used my Rayman CD with the original game with the intro and ending movie on it.
Unlike you though, I had a hard time getting the sound effects to work. What I had to do to fix it is kind of weird, but unless you have the problem I won't go over it.
But to get the music working, it means your CD drive is not correctly mounted. Go to your Dfend window and try this:
Right click on your Rayman shortcut and click edit. Go down to Drivers on the list on the left and click that. Click on the Add button below your your drives list. Change the type to "CD Drive" and make sure you have "mount fixed path" selected. Then click the folder button next to "folder for mounting" and choose the CD drive folder in the explorer window and press OK. (Mine is D:) Make sure it says "Normal MSCDEX" for "access method." Then make sure the last drop down menu for the drive letter is the correct drive letter. Press OK. If you have a duplicate drive on your drives list that shows the same letter drive as the CD drive you just created, click on it and press the delete button.
Also you may experience crackles and pops when the sound effects play in the game. To fix that go to the same list under "edit" and click on Sound. Uncheck "Activate PC Speaker" and "Activate Disney Sound Source."
Here's a way that should fix the game running too fast. Again in the same list under "edit" for your Rayman shortcut, go to "graphics." Where it says Video Card, the drop down menu is usually automatically set to "svga_s3." Change it to "vgaonly." Also change the Scale drop down menu to, "No scaling." This also fixes the flickering on the intro movie if you have problems watching that (although all movies are deleted on my version of Rayman Collector).
One other way to fix the problem where the actual game is running to fast is to press ESC. Go to "graphic details" and change the frequency from 60 to 50, then change it back to 60 and go back to the game. This will usually fix the problem. It seems sometimes Rayman has a bug where the game starts too fast.
EDIT: I just tried my Rayman Collector CD and got the whole thing running fine. Let me know if any of these things worked for you, because I can give step by step instructions from scratch for the Rayman Collector version on how I got it running if you need.

Well my Rayman Collector also has the deleted intro and ending.
Well I fixed the music problem and the speed, but now, no sound effects... oo'

Ah okay. So here's what I had to do to get the sound working... The major point is the install/setup must be run in an emulated mode because it seems like the game wants you to answer, "Sound test succeeded" after setting up which sound card in order for it to work. Rayman is also weird compared to other DOS games because the setup program runs from the CD rather than installing to your hard drive like most DOS games.
So what I had to do to get everything working is to set up a new Dfend shortcut with the add wizard. Go into the folder where the original Rayman is on the Collector CD and select "Install.bat" as your main game exe and leave the setup part blank.
Before running the new shortcut you made, right click on it and go to edit. Add the CD drive and do the VGA setup I went over earlier in the options. You can also uncheck the unneeded soundcards that aren't Soundblaster 16 to prevent popping and hissing in the sound.
Now run the new shortcut you made and setup the sound inside Install.bat. You should choose soundblaster 16 or "sb16" as it is in some versions of Rayman's install and have it autodetect. If you do a sound test and you hear "Perfect!" then it is setup correctly. Save the settings and choose to install and then play. It should work now.
The only thing is you pretty much have to choose to play the game through install.bat every time from now on instead of running it from Rayman.exe or Rayman.bat. It's not too annoying and it's the only way I could figure out to get everything to work since it's set up so weird. Let me know if that works.

Hmm... when it crashes during the test sound that means it's not recognizing the sound card or the install.bat isn't being emulated as the game would. I'll need to go home and double check again for you. Did you start from scratch when following what I did on my post before where you made the install.bat the primary exe for the game in Dfend?
Also if you do an autodetect, it should pick up Soundblaster 16 with an IRQ of 7, Port of 220, and DMA of 5 like Dfend emulates on default.
If you have a shortcut in Dfend running the install.bat and you use that to start the game instead of Rayman.exe, it should work. You can try deleting the resource.cfg file from where you installed the game to see if that works. It will erase whatever settings you currently have and maybe allow you to test the sound card successfully.

Dark Rayman was shit easy- the GBC version was much harder. I'm stuck on Mr Dark o(n the PS1 version) though, although I don't see the point in defeating him anymore.

Dark Rayman in the GBC version was easy for me because a glitch happened where he disappeared.

I dunno how it happened, he might have fallen down a pit. Theres a glitch for the other versions to avoid making Dark Rayman appear, but theres no point since its one of the best bits of the game.

I also have got the PC version, the French version of the Rayman Collector... but it hasn't the videos... And I still think that the graphics are smoother on PSX as it contains the entire soundtrack.

The PS1 version lacks the PC version of the first part of Bongo Hills, but the opposite is also true. Which is a shame, because both levels are awesome.
How do you know that the PC version has a wider colour palette? I've played both versions, and I never noticed a difference in the number of colours...

Wrong! If you have the original CD version of Rayman 1, you can go into the Main Menu graphic options and turn on Differential Scrolling.

Hmm I don't know Haruka. I can't seem to duplicate that error, but I can get the error when the install.bat is setup for the setup file in my dfend shortcut. Have you made sure that install.bat is the main game exe and not the setup? I just leave the setup shortcut blank.
Other than that I don't know. Rayman's PC setup has never been very versatile, even before emulation years later.

Fine. It adds differential scrolling, but does it increase the backgrounds' quality to the level seen in the PS1 version?
~I would like to add that the PS1 version has many exclusive music tracks
