He appears in Tonic Trouble, and I'm not sure if it counts, but Prince of Persia Warrior Within has Rayman's hand as a secret item.

I'm looking for more of a full appearance rather than just an easter egg (unless it's Rayman himself and not just a body part etc.). So Tonic Trouble is correct.
