As I understand it, the use of plungers in that 2D version was never actually shown in the form of gameplay, so that doesn't count. But you're right to be thinking outside the Rabbids series!

All Rayman games with Rabbids, Origins, Legends and Fiesta Run
Question 9: There is a background image in Rayman 1 which appears in most versions and "autoscrolls" if differential scrolling/parallaxing is enabled. But in one version it makes an additional appearance in which it scrolls as a function of the player's movement like a normal background. Which version?

Oh shoot, I'm really sorry, but I forgot you couldn't answer. So this answer is right, but I can't take it. I'll need to pose a different question. Sorry again.
Question 9a: (Carrot can't answer) What background is used in the Jaguar version of Rayman 1 for the boss-fights against both incarnations of Space Mama?

Welp, CHRdutch said it, the background in the heigths with one rainbow, mountains and clouds.
Bonus Question: Mister Stone can, by thumping the ground, create sparks that travel horizontally and turn into clouds when they hit the side of the arena. In Rayman Designer, it is possible through hackery to spawn these sparks, but when they hit something solid they don't turn into clouds. What do they become instead?
