In the torso I'd want three bones: and upper, middle, and bottom.
In the feet: back, middle, and front.
In the hair: base, end.
The face you can do later because it's probably a lot more complicated. In the face: jaw up-down, mouth corners up-down (smile-frown), narrow-wide (ooh-eee), eyes, eyelids, left-outside brow up-down, left-inside brow up-down, right-outside brow up-down, right-inside brow up-down.
