Oh i might as well add some of the other spin-offs I've played.
Rayman Junior - none, they were all pretty mmm..
Rayman 3 (GBA) - Heart of the Ancients, eww boss fight!
Rayman Raving Rabbids (GBA) - TBD, need to replay

Rayman 1 - Bongo Hills. The majority (including me) struggle with this level, and I probably don't need to explain why. That level is tough as nails!
Rayman 2 - The Sanctuary of Stone and Fire and Tomb of the Ancients (but SoSaF more)
Rayman 3 - Hoodlum Headquarters. The only thing I like about this level is the Rayman 2 easter egg.

Personally, that was never the hardest level for me. The only place where I truly had to struggle was stage 5. where you had to ride sprinklers to the next area. It was even trickier when you're small! I think the best advice I could give is to practice lots. I don't find the game too challenging to me these days compared to back when I was a kid.

I remember Allegro Presto part 3 being harder due to the sliding and I would keep falling.

Yup, Thats the reason why allegro presto was my hardest band land stage back then!

I don't really "hate" a Rayman level anymore, although I do find phase 2 of Space Mama's Crater to be annoying. The past three times I've played through the game I struggled with getting the jumps right while using the flying rings, resulting in multiple deaths.

I have no problem with them using the PS2 and either a CRT or the OSSC. I wouldn't be able to play it on PS3 properly, using an emulator or using a PS2 directly to my LCD with comp since that adds delay.
Basically the input delay is what makes that timing difficult but if you have very low input lag (or none at all) I find it far easier

There is only one... But there isn't a lot of Rayman levels that I hate. There's most of them that I enjoy.
For me, it's Sanctuary of Stone and Fire:
I Don't hate the level. It's just that the Physics and collision in the walking shell section in the wrong temple get on my nerves. You have to be really precise with it. Whenever you make a jump that is slightly off even though you Would make it to the other side, instead of normally landing on the ground, you instantly collide into the ground as if it was a wall.

That's true. I think they realized that section was ridiculously hard, since they put those red lums on the loop-de-loop. Still annoys me though since I almost never make it out of there with the gold fist. Pity they couldn't have redesigned it if they knew how bad it was…

I had that happen me too with the ground collision though honestly I like that level. It's one of the longer levels though.

I too have no real problems with this level, it's just long. This level is actually pretty easy for me. I've made it a few times out with the golden fist, though I have to agree it's hard to do so due to the darn shell flying off the path or exploding when I jump.

That only happens if you jump as you fall off a step I think. But that level was never hard for me. On the first playthrough I made a few mistakes but that's to be expected on the first ever playthrough.

Even though Rayman 1 is my favorite Rayman game I'll have to go with the Eat at Joe's level, the last phase with the buoys is the only thing which ever frustrated me along with Space Mama's Crater in the 1st game.

Currently my most hated level was Mr. Stone’s Peaks, and only bc of the first level. It’s very hard to control Rayman going through the rows of spikes on the walls so every time while flying I got hit after a few seconds of attemptin to maneuver o get hit again, and the end result is I lose a life and some power ups.

I think avoiding the Drawing Pins on Picture City would be more challenging than that.

Oh yes, that's going to be SOOO much fun. Thankfully in my walkthrough, I'm not there yet since I'm still at Eraser Plains so I can spare myself one agony for now while I face another

It's not even challenging really but if you haven't played in a while then it is, especially if you're actually trying for a walkthrough and have it at the back of your mind. You do have to be precise on some of those pins though.

True. And it's Rayman Advance so it shouldn't be as hard as if I was trying a Rayman PS1 walkthrough, for example.

Ah right, I've yet to properly play that even though I have it. Apart from cage locations is it much different in other ways?

I'm afraid I can't really describe all the changes myself, but most of them were geared towards making this version of the original easy. The most obvious changes that reflect this, to me are:
The extra hit point.
More lives scattered about.
First phase of Bongo Hills removed.
A cloud added to Allegro Presto to first phase to make getting the last cage easier.
