Had the developers from Rayman Revolution been involved, the answer would probably be the Sanctuary of Water and Lava.

Maybe these developers were involved in Rayman 2 GBC as well as Revolution. Explains why there's ice in the Sanctuary of Rock and Lava and Canopy-like music playing in the background of said place, among other things

Let's see - RHR has 20 levels, so there is a
(1/20) = 0.05 of a correct guess if you don't know it.
R2 has 21 (if you count the bonus), so to guess all of them correctly, and in the correct order - is one out of P(21,12) (21 permute 12) = 140792940288000 combinations, giving a chance of roughly
7.1E-15 for a correct guess.

All I know is that two of the levels are "The Sanctuary of Lava and Fire" and "The Sanctuary of Rock and Stone".

It makes perfect sense, in terms of elemental sanctuary - to have Rock and Stone (earth) together, Lava and Fire together, just like Water and Ice are together. Probably this is how the original designers envisioned it.
However, when the levels were actually built, someone must have realized that a level of just 'Rock and Stone' would be boring, and therefore both Sanctuaries ended up with strong elements of both Stone/Rock and Fire/Lava. Hence, the names had to be mingled.

Well, I think I have to make a random guess, just to get things going.
So my guess would be: The Precipice, The Bayou, The Iron Mountains, The Walk of Power, The Canopy, The Sanctuary of Stone and Fire, Top of the World, Menhir Hills, The Fairy Glade, Tomb of the Ancients, Echoing Caves, The Sanctuary of Water and Ice.

If anything, this quiz has made me realize that I really should replay Rayman 2 and 3 at some point.
Anyway, I'm sure The LockJaw Challenge plays during, well, the LockJaw section of the first phase (really hoping that was in the first phase). As for the other two - which I hardly remember at all - I'll guess that it plays at some point in the middle of phase 2, and near the start of phase 3?

I've said before that TLS is my least favorite R3 level. A lot of it is because during my early playthroughs, my 3D platforming skills were mediocre, and I spent
a lot of time in each of these sections. So I kinda remember.
The track plays in the Lockjaw part of Part 1 (main room, the one with the secret fake wall). In Part 2 it plays, I believe, in that room with the row of 4 invisible vertically traveling platforms. In Part 3 it is in top area of the main chamber - the section where you jump on alternating "hanging balcony" platforms on the left and right walls, to reach an opening at the top.
