Actually I've had this discussion before somewhere and was informed it wasn't stretched in any way. It's just the peculiar way I see it, I suppose.

I don't think it's a very good description. Beyond the critical temperature and pressure, the substance becomes a supercritical fluid, which is not really either vapour or liquid. I shares properties with both, but is not the same.
I studied that like eight years ago so I can't be of much more help but hopefully that'll clear things up.

At high temperatures, all forms of matter begin to converge. The hotter you get, the less dense liquid becomes, and the more dense gas becomes and at/above the temperature at which they meet, they become one and the same, sort of a literal combination between their properties; a supercritical fluid, like Hunch said. It appears slightly more liquid-esque at first despite being neither in particular, but since the substance is now stuck in a unified stasis (though it can still be solidified under extreme pressure, solids are sort of different), as you raise the temperature, the fluid also raises in pressure, making it less dense, and it starts to behave more like a gas. Though saying it's a linear transition would be inaccurate, since it has a tendency to flip the fuck out with the slightest change in temperature at that state.
Triple points are also rad, but not as rad.
There was a Vsauce video that explained it brilliantly, though I can't for the life of me remember which it was.

Does that mean you'll have a ball of liquid floating around the room like it's a gas? That's pretty hilarious.
So does the gas phase surpass another critical point when it becomes plasma, or is that something completely different again?

Not really, you wouldn't be able to observe it like that. And plasma is something else, basically ionized gas. It's considered a distinct state of matter, while supercritical fluid isn't. That's because beyond the critical point the distinction between liquid and gas disappears, and while it's neither of them it's not something entirely different either.
