I thought you were referring to the caption cinematics as you enter levels.

Those aren't in the levels.

No but you can only see them when you are in a level.

Then you only see the prison ship at the beginning of the game and the end of it..

So, wait, you're talking about the Prison Ship. You can see it in:
- The intro
- The escape part in the beginning of the game
- As an intro to The Bayou
- As an intro to The Precipice
- As an intro to The Tomb of Ancients
- As an intro to The Prison Ship
- In the Prison Ship itself
- The Crow's Nest - well of course, the Crow's Nest is on the Prison Ship!
That's all, I think. Well, in the Dreamcast version... I really don't know though.

Then 1 is from original Rayman 1 for PSX, and then we have another (2nd English actor) for Rayman Junior/Amazing Learning Games with Rayman.
