I actually made that on the first try. TBH, I don't have a "most hated level" at the top of my head. Sure there have been a few hard / deliberately frustrating levels in the games throughout the years, but none that stood out so much, or that I felt were "broken".
Like, the Land of the Livid Dead in Origins or Dark Legacy in Redemption - they are supposed to be well above the rest in difficulty, because they are final, optional challenges.

This could probably also go into the unpopular opinions topic, but:
I dislike pretty much any of the Rayman 1 levels which you have to play multiple times because when you first play them, you lack some of the abilities to get all the cages. Conceptually of course, not gameplay wise, but still. It's one thing to promote replaying (parts of) a game by having re-plays add to game canon or lead to different outcomes, but the R1 levels I'm talking about don't do any of that; reruns are forced upon you for little more than the sake of doing reruns.
Ironically, those levels also made replaying the whole game a worse experience. Having to go through certain ones 4+ times when you only have to play others twice makes replaying levels feel like that much more of a drag. If you really like the aesthetics of those levels that might be a different story, but they're not my cup of tea
(edit: "not my cup of tea" referring to the levels as a whole, not to the aesthetics)
Gameplay/lore wise, my least favourite level is probably the Céloche fight in R3. Felt completely irrelevant to the story (never played a role before/after the fight itself), really annoying mechanics, and didn't have any cool features (e.g. the Hoodstomper also felt somewhat "irrelevant", but at least it had the stomping mini game after, which I thought was fun).

I don't think there are levels in R1 that have to be played more than twice, are there? With that said, the requirement to find every cage to finish the game in itself is quite unpopular.

What - having to go back to replay levels? No, not really. In fact, most games were linear - replaying levels out of order was simply impossible.

The way I usually take this fight is to keep the HMF canister as long as possible. So I charge the fist (whether powered-up or not) and whenever Razoff and his ball approach the can, I whack him. Total knock off and into the hole where he takes damage, woooo! Then rinse and repeat when he recovers.
