Is it indeed that book? There's some good pictures in there. I enjoyed seeing the Sparadraps in the concept arts for the Dragon Chef far more than I should have. ;P
In fact, it reminds me of many scenes in Origins that reminded me of Rayman 2's artstyle, such as the metal walkways in the Moody Clouds levels, for example. I like seeing that some of that style hasn't died or been forgotten over the years, but has persisted and evolved.
