There are many options for me: Sonic Unleashed, Sonic Adventure 2, Hotline Miami 1 and 2, Team Fortress 2, Saint Row 2, Payday: The Heist (I detest the 2) and many more.
But I stay with Hotline Miami, thanks to that wonderful game between the world of Synthwave music and the culture of the eighties.
Honestly, it's an indie game that far surpasses Undertale.

I think of all the games I've played in my life only a handful have had a profound impact on me, and (of those I can think of) aside from Rayman 2 they'd be Portal 2 and Jet Set Radio.
Portal 2 has been the only game I've ever been truly excited for, in fact I don't think anything's given me such a childlike sense of excitement than the first time I saw the Portal 2 trailer on TV
I remember it being the first triple A game I actually wanted to play, and the storytelling and deep lore changed the way I thought about videogames as an art medium.
I remember stumbling upon Jet Set Radio in the Steam store while it was free for a week, and I had only heard about the game and listened to some of the music but I didn't know what the actual game was like.
After playing it I got kind of obsessed, replaying it and listening to the soundtrack constantly for a good few weeks. I even hunted down an original XBOX just to play the sequel (the only time I've bought a console just to play a single game). The setting, art style, gameplay and soundtrack all seemed so unique and I feel like I stumbled across it at the exact right time to fully appreciate it.
Anyway, aside from that I suppose a few other games that had a large impact on me were Stepmania and to a greater extent Osu which really got me into rhythm games (now one of my favourite genres) and the classic 3rd person platformers of my childhood that shaped me as a kid, including Jack and Daxter, Ratchet and Clank and of course Rayman 2 and 3

Oh well there's also games for me like Crash Bandicoot. I really liked that one and put countless hours of my 9 year old life into Warped, well at least as much as I could before my dad would say "turn that off your eyes are going square from looking at it" 
I like Ratchet & Clank too, I still have to complete the 3 of those PS2 games of it.
There are others I love like Tom Clancy games, Splinter Cell and Rainbow Six are 2 examples of those. There are a lot more but Crash is probably the most memorable for me along with Super Mario games, I probably had an even bigger obsession with Mario then I do with Rayman

Oh, this is hard. Horizon Zero Dawn is definitely a contender, and so is Bloodborne (both PS4 exclusives, unfortunately)... I also really like the Half-Life and Portal series, and horror games, such as Outlast or Until Dawn. Yes, and Sid Meier's Civilization V, of course. Those are probably my all-time favorites.
