If one were to touch the Protoon, would all the electric bolts in it start zapping towards the person's finger like one of those electric-ball thingies?

You have a good point there. We don't know what Mr Dark is or how he works, for all we know he might not conduct electricity.
Also, was it never really explained or figured out why Rayman turns into electoons when he dies? Or why he appears to give the Magician electoons when he gives him tings? I'm assuming the latter is the result of that game mechanic being changed and the sprite animation not being changed with it.

Given that Rayman is made of pure Energy, I believe in Rayman 1, the reason why he shoots up into Electoons, is because he cannot yet reform himself, as such, the Electoons, being energy related, carry his energy and aid him in the reformation process, by the time of Rayman 2, he can do this himself, hence the coloured orbs when he reforms as opposed to Electoons.
