Perhaps the problem doesn't occur to everyone, so there was no fix needed to some, but a much more simpler means of fixing this if it is a problem should have been provided, it seems common enough of a problem to justify such a utility.

Only issue I ever ran into, on the PC version of Rayman 3 is Cinematics not working on 16:9 ratio screen resolutions, such as 1920 x 1080, however they work flawlessly under 4:3 and 16:10 resolutions (Like 1280 x 1024 or 1920 x 1200). Plus to even run at high resolution I always had to modify the file. :)

Rayman 3 wasn't originally designed for widescreen aspect. Just don't play on such resolutions. As a fix.. hmm.. maybe replacing or updating graphic dlls. I need to take a look on it.

I agree it wasn't, but unlike Rayman 2, it displays correctly when forced to go to widescreen:

(Skip to 1:00)
The only problem is with the menus, hud and cutscenes, barring those, the game looks right and plays right.

Rayman 2 on the other hand, just stretches the display.

The alternative I think, is to turn off UAC temporarily, edit the file, then turn it back on.

Save updated file to your desktop and replace it.

I've tried literally every single tutorial and method and nothing works. I can put in a replaced file, yes, but it'll simply create a new one when I start the game.

Delete ubi.bak and edit ubi.ini again.

Hmm, curious.
I don't have the GoG version of Rayman 3, however, I'm assuming the ubi.ini file is inside the Rayman 3 directory, no?
I do have the GoG Rayman 2, however, so I don't know if this'll get you where I did, but try going to:
C:\Users\UserNameHere\AppData\Local\VirtualStore\Program Files\GOG.com\Rayman 3
And see if you can change the ubi.ini there.
