I know it was, but, given that it was given the same...treatment as any boss, it felt a little underwhelming.
But then again, I did grow on the PS1 version, so it could just be bias since I probably feel that the PS1 version handled Umber better.

I once briefly played the PS1 version on a friend's console. It was before I had ever heard of voice acting in Rayman 2. I was apalled instantly. But that was probably just my disbelief talking. I don't know if I'd still despise it as much as I did back then.

You misunderstand, the PS1 version is graphically inferior to the N64 version, it omits and changes content from the original N64 version to deal with the limitations the PS1 had. However, it made up for this by using a disc based format, allowing for higher quality soundtrack amongst other additions.
All in all, while they are two versions of the same game, and can be compared, each version has its own perks, which don't really make one better than the other, just simply different.

I understand, but with remapping and me having a PS1 and not an N64, I thought I might as well be on the lookout for another version of R2 I don't know yet.

That "you misunderstand" was directed at DarkKitty.
Personally, I think you should give the PS1 version a go, Shroobie, the differences there are worthwhile enough to make it a different experience.
(By the way, it seems you fell victim to that old issue where it seems a post didn't get through, but...it did.)

Mm. I can't seem to delete one of them either. I didn't actually post twice. Look you can see one of them is slightly different. It took my edit for a brand new post.

That's right, I've never played it. I've only seen YouTube footage here and there. It looks like it's going to be an even more different experience than I thought.

I think it is worth a check out. These are the major differences you can find:
- 800 Lums instead of 1000 to catch
- You have massive doors in the Hall of Doors, with a picture of a mask. This excludes the existance of the Chamber of the Teensies, since they talk with Rayman in the Hall of Doors and tell some extra information to Rayman (They even at a point want Rayman to be their king!)
- Murfy doesn't appear in the game, and Ly replaces him for advices
- Instead of Lums, you rescue Denys/Denies (Minisauruses), Ludivs and Greenbottles when you break cages. Every time you break a cage, your energy bar maximum valour is increased slightly.
- The guardians talk with Rayman before fighting
- Umber doesn't commit suicide and is the only guardian helping Rayman at his own will. Its revealed that he can decode auras.
- More battles with Ninja Henchmen and in a different way. We are also introduced to the leader of the Ninja Henchmen: Ninjaws.
- Extra cutscene with Razorbeard shows him talking with Ninjaws
- Differently designed Helicopter-Bombs
- Some level designs got adapted, and the biggest difference is in the Sanctuary of Stone and Fire
- Harder and different final battle with Razorbeard
- Playable Rayman 2 Prototype when it was was in 2D in case you catch more than 90% of the Lums

I think Haruka covered most of it, and I share her recommendation, the differences are notable enough to make this version a different experience, sadly, they did omit the Top of the World completely, and it is nowhere to be seen, along with other things, but it makes up for it in other ways.
And, it features Antitoons (they don't appear very often, but still!).

Yes, the Top of the World doesn't appear in the game, and the Iron Mountains has got the name of Gloomy Island. Uglette wears also a pink bow.
Some levels due to the structural change, some got way shorter (Tomb of the Ancients for example) and others got larger.
