It could also be that all of his vital organs are stored inside his head and that his torso, hands and feet are merely empty shells that he moves around with some form of telekinesis, which he has thanks to the power of the large brain stored within his nose...

Yeah, I also think that his brain is in his nose. Maybe the food is processed into some kind of energy in his mouth then teleported. In fact, there is no evidence that he eats at all except in RTAS, which many don't consider canon.

In episode 1, Rigatoni tells him he'll have no dinner. Rayman says that he had a big lunch and burps. This is a reference to eating.
The mushroom probably isn't food, considering that it shrinks him.
Any Rayman GBA usually isn't canon.
It remains that Rayman never eats food in anything that could be considerd canon.
