Yeah, I also think that his brain is in his nose. Maybe the food is processed into some kind of energy in his mouth then teleported. In fact, there is no evidence that he eats at all except in RTAS, which many don't consider canon.

Actually he eats a mushroom in Rayman Revolution [you grow it when you get the rain mask and it shrinks you].

Not as far as I know. He was drinking some kind of soda in RRR GBA too.

The mushroom probably isn't food, considering that it shrinks him.
Any Rayman GBA usually isn't canon.
It remains that Rayman never eats food in anything that could be considerd canon.
