Granted those are green. But at least they don't take the majority of the game's levels.
Once Upon a Time has green in the beginning and fades into some browns and then we get into dark, gloomy purples and reds in the castle dungeon in the second part of the level.
While one Rayman 2 level uses green all throughout it.

Legends had a lot more variety for sure, each stage had it's own land marks that stood out, kinda like Rayman 3. Origins was more like Rayman 2, a lot of levels look the same while a few stand out.

You dang ass nerd. The only way the colour palette of Rayman 2 is somehow a bad thing is if you completely failed to take in the tone, visuals and pacing of the game.
I'll shove a copy of the game down your throat if it means getting you to admit that Ray 2 is kinda rad. I found it fun too, but incredibly disorienting. It really messed with my head.

I didn't like the PS1 version of it, just felt lazy to me personally, I liked having full control of the flying shell, it felt really awesome as opposed to being thrown into an endless linear loop.

Meh, we're on opposing sides, I actually prefer the PS1 final boss, it felt more like a fight as opposed to a simple yet drawn out finisher that the other versions had.

I liked the more "open" environment you were able to fight him in. Doing all those loops and turns to me was just incredibly satisfying.
