1. South Africa is an independent country already
2. Korea is not a country, Korea is a peninsula in Asia consisting of the countries North Korea and South Korea
3. Venezuela is an independent country
4. Chile is an independent country
5. Ireland is an independent country, you could be thinking of Northern Ireland, but a lot of that nation’s population would prefer to stay in the United Kingdom

Well, you didn't define what "a lot" of the population is. Or what exactly they define as independence.

So I think the Northern Ireland example stands.

I would also add:

The Curds in Turkey
The Basques in Spain
The Luhansk and Donetsk regions in Ukraine (at least before the war they did, no idea what they want now)
The Palestinian Arabs in the greater region which is currently divided between Jordan, Israel and the disputed territories in between

There's obviously New Caledonia/Kanaky that is a hot topic in France
Scotland fought to have a vote for independance in the last few years
Palestine, of course, even though they shouldn't have to fight for it since their country was stolen in the first place
The situation in Taiwan and Hong Kong regarding their affiliation to China is murky
And there are rebels fighting for independance in Ethiopia if I remember correctly.

Those countries are not part of Kurdistan, I am afraid
