Oh yeah. Guess I never got close enough to them during my numerous playthroughs. Shows you that there is always something to learn.
Now that I think about it, their arms look a lot like those arms sticking out the walls (that can also pull Rayman in). Perhaps the mysterious creatures in the walls are also mini-Janos? That would be consistent with them eating Rayman.

The arms also make the same noise that the Mini-Janos do when they breathe fire.

That's what I always thought, but as it says on the wiki, the armed creatures in the Tomb of the Ancients have two eyes, whereas (mini-)Janos clearly have one.
I've talked about this before, but I'm now 99% sure that Jano and Janods (Psychlops) have a common origin. There is the story in L'Histoire de Rayman of Michaël Janod working on a model for an ugly one-eyed bouncing creature, and having to save it quickly and just using his own name. Considering that files in Rayman 2 often abbreviated "-od", "-eau" and "-ot" to "-o", and that there is a model in Rayman 2 called "jano", they must be one and the same. I know L'Histoire claims that it was unused, and then revived in Origins as the Psychlops, but given the circumstances, that has to be a misunderstanding.
I also really feel like the cave in the Sanctuary of Stone and Fire where you fight the mini-Jano is like a prototype of the cavern where the first boss fight of BG&E takes place. They both have a narrow window at the top (created by the DomZ meteor), they both have unfriendly-looking stalagmites, and both contain an enemy known in the respective game files as "Monstroplante". Apparently Michel himself programmed the one in Rayman 2, so perhaps the ideas for his next major project were already crystallizing in his mind…

By the way, you guys see the trailer for a HD fan remake of Rayman 2:
While it's based on the Dreamcast version, I hope they at least add Ninjaws and Grolem 13.

So, what would the sanctuary at the end of the Iron Mountains in Rayman Revolution where you fight Grolem 13 be called? The Sanctuary of Lightning and Air? Come to think of it, the last quarter of the game does feel very rushed. You only have one level before the final Mask level, the final mask level isn't a corresponding Sanctuary, is short and easy and there is no boss for it except in Revolution, then you just go to the Prison Ship (which, outside of one very short section, consists of slides and a flying shell segment) and fight Razorbeard. It's obvious they had a Wind Sanctuary planned, but had to scrap it because of time constraints or something, considering the other 3 classical elements have Sanctuaries, the area where you get the last mask in Revolution is up in the sky and Grolem 13 is air-themed.

It almost seems as if Beneath the Sanctuary of Rock and Lava should have been the fourth one as that is entirely focused on air. Then it'd work out perfectly with the four elements.

I never knew this until today, but Ribshark told me that in Rayman 3D, you can stand on the platforms where the 1000th Lum is without raising them because the area is so broken, and that he successfully got to the next area once, even though it usually bugs out.
I decided to try it, and it turns out that it is possible to get to the next area. If you land on the ground inside the skull (there's no sliding physics because it's that broken), then jump from there and helicopter, you successfully fall down the hole and load into the next area. If you don't land on the ground inside the skull before attempting to helicopter, you just helicopter into an invisible wall and get stuck like you normally would.
I might try get it on video tomorrow if I can get it to happen again, but I might have to use Citra, as I don't know a way to properly record on the 3DS itself.

Yeah. In case you were wondering, the demo names for The Sanctuary of Stone and Fire and The Sanctuary of Rock and Lava were The Sanctuary of Lava and Fire and The Sanctuary of Rock and Stone respectively. I personally prefer those names, as they fit better with The Sanctuary of Water and Ice and show that the second sanctuary is unambiguously the Fire temple while the third is unambiguously the Earth temple. It's also another hint that there was a cut Wind-themed fourth Sanctuary as well. I'm guessing the elements from it were reused in the updrafts in the Fairy Glade, the fan in Beneath the Sanctuary of Rock and Lava and Grolem 13 and his area in Rayman Revolution.

There are so many unanswered questions about Rayman 2 I wonder if we'll ever get an answer to. From the game files it's also made clear that the levels were meant to be put together differently, with areas from The Iron Mountains being apart of the Fairy Glade as an example.

I guess that when they finished the levels, they realized that there is so much stone in the "Lava&Fire" and so much lava in the "Rock&Stone", that the original names are not really faithful to the actual level contents.
Also, lava is actually nothing but molten rock, so it can still technically be considered an "earth temple".
Catch another piece of (this one - pretty useless) trivia: you know how Revolution changed Sanctuary of Rock & Lava to Lava Sanctuary? It seems they were pretty careful in fixing all the references everywhere except one place - when Foutch appears, he is still referred to as Guardian of the Sanctuary of Rock and Lava.

Actually yeah, that makes a lot of sense. I wonder why I never thought of that.
I suppose from a gameplay perspective, they realized that they couldn't have Rayman flying around in an open space, so they ended up making the level an underground earth temple. It's the same reason they nerfed the Throttle Copter to three seconds.
A flame-throwing flying monster also makes more sense as an air guardian than an earth one, though obviously he'd make even more sense as a fire one...
