It would be cool if the final boss in Rayman 4 doesn't have a health bar, so you cant tell when it is almost dead or if you are even damaging it!

There are games that already do that... Super Metroid, for example. But you always need to give the players other clues that hint you that you are doing damage, like squeels, flashes, or blood.

It's a general rule of game design so people don't get too frustrated.

Yeah, usually they give you a clue you are damaging them, but they dont flinch, here is some:
Incubus (Silent Hill): Music Change
Ultimate Tango (Noitu Love 2): Little bits of fire when hit
Rootmarks (Metal Slug 3): The flash when he is damaged gets redder and redder
Ganondorf (Legend of Zelda: Twilight Princess): Cape gets torn

Old Sonic games...

But I personally like life bars, especially if boss changes its strategy after some damaging. I know that "after 2 hits Mr. Dork (don't think Mr. Dark) will start to use the black hole generator".

A life bar doesn't need to be there, but there need to be sign's that you're damaging it.

Hah, Henchman1028's post just made me think about a funny boss in a funny game, whose music also changes when you do damage.. Anybody heard of the boss called "The Great Mighty Poo" in "Conker's Bad Fur Day"? That boss rules! ^^
