Ideally, if you can, I'd suggest going the route of using RGB output on the consoles like the Mega Drive. I know the Genesis has native RGB output, where you can use a scart cable, and with that, plug it into the XRGB-Mini Framemeister. Then HDMI out from there into a capture device with HDMI. Especially if your aim, in the end, is great picture quality.
