In that case, I actually own a j-tagged Xbox 360, a modded PSP, and a modded Wii.
As far as game mods go, there are a ton of great ones for Sonic Generations PC that I have, and I also highly recommend the Project M mod for Super Smash Bros. Brawl for any Smash fans out there.

I think it's worth checking out, especially for the HDMI compatibility for pretty much every console.

Some of that looks really nifty, not gonna lie!
Which reminds me, I still need to mod my Game Gear so it can have a better screen, I did so for my Sega Nomad already. Which I had to with it, due to the very worn / damaged screen from the heat of the CFL tube in there.
My own modding history, also would be my GBA with the blue aluminum shell, and my SNES for the RGB restoration on output and the S/PDIF toslink mod for digital audio.
