For Rayman 2, I like Axel's theme, and the Canopy.
For Rayman 3, my favorites are the Hoodoo theme, and Master Kaag's theme.
For Rayman M, my favorite is Razorbeard's theme. Yep, he's my favorite character, and his music's my favorite in the game too. XD

And I haven't decided yet for Rayman 1.

Oh, at google you have to write IGN Arena or something else, and then it will be. Remember it needs to be GameCube. Then click at videos, and the first one is with music. When Rayman jumps, and Dark Globox is 1st, there are few seconds of his music.
