I watched one of the videos, and I'm surprised Rayman Mini is actually on iOS. Is there an advantage to speedrunning that version instead of the PC one?

I thought Mini was only on iOS, and that's why so many considered it irrelevant?

Not sure if the exclusivity agreement is limited in time, but if not, it's quite unlikely! Not that Mini is a particularly interesting game, it doesn't look bad but it mostly reuses a lot of stuff from other games and doesn't innovate much.
