And I don't think it's 60 fps either. The final render may have been converted like that, but the raw recording definitely isn't running with 60 fps.

It think the Dreamcast version supports high resolutions like 1920 x 1080.

Actually, yes, it's stretched a little, I didn't notice, sorry, because quality is good.
And yes, DC supports widescreen, but gives always downscaled resolution. E.g. when you have 1080p, you'll get 720p (in Fraps e.g.), but downscaled looks better, in this case, in higher resolution, because you don't see lack of AA - smart, I'm curious why devs don't use this method in games.

Looking at the manual for Rayman Revolution, I noticed that there's a Japanese language option, which isn't in the final game. Does this mean the the game was once planned to have Japanese in PAL regions, as opposed to only Japan?

That's literally the definition of the oldest form of AA.
