Doesn't look like anything I've seen before, at least not at the places I go to.

That looks pretty god-tier, with the eggs and onions. They don't have tartare in trumpville, i've had it plenty times back in the netherlands though

I try to eat less meat these days, but I used to cook my steaks medium.

I tend to prefer blue (extra-rare) over rare now.
