< was mulling over the infinite monkeys with typewriters theory, where supposedly they would have a 100% chance of writing every conceivable string of characters, and came to a strange conclusion.

First of all, the theorem states that one monkey hitting keys at random forever will almost surely type any finite string. It says nothing about an army of monkeys, infinite or not, but we'll get there.

< imagines its actually possible that every monkey just presses the A key forever, or just infinite gibberish, so there's no guarantee that they type any specific string.

There is a possibility that one or all of the monkeys press the A key forever, but the probability of it happening is zero. The theorem only states that the probability that one monkey types a certain finite string is 1, which you can easily extend to several monkeys or even an infinity of them, because, given two monkeys M1 and M2, and a finite string S, P(M1 types S) = P(M2 types S) = 1 (that's the theorem), and those two events being supposedly independent, P(M1 types S & M2 types S) = P(M1 types S) × P(M2 types S) = 1. Think proof by induction and you'll cover all cases. So, like you said, there is no guarantee, but the definition of almost surely is that the probability is 1, leaving room for other possible cases with probability 0.

That being said, the likelihood of the monkeys typing any string increases proportionally to the amount of monkeys, and if the amount of monkeys is infinite then the possibility of them writing every conceivable word is multiplied by infinity, in other words an infinitely large possibility or 100%.

Let's bring back our monkeys M1 and M2 and finite string S. Your wording is quite confusing, but I assume you're talking about the probability that, among an infinite number of monkeys, one writes S. Well, P(M1 types S or M2 types S) = 1 - P(M1 does not type S & M2 does not type S) = 1 - P(M1 does not type S) × P(M2 does not type S) = 1 - (1 - P(M1 types S)) × (1 - P(M2 types S)) = 1 - (1 - 1) × (1 - 1) = 1 (using the theorem again). You can easily see why adding an infinite numbers of monkeys won't change the probability, therefore your assertion that said probability is proportional to the number of monkeys is incorrect. Don't forget that probabilities can never exceed 1.

So basically it's a paradox, the monkeys have both a 100% chance of typing everything while at the same time not being guaranteed to type everything.

Interestingly enough, your incorrect proof led you to the right value as the monkeys (whether one or all, whether they're finite or infinite) have a 100% chance of typing a given finite string. It means that the probability is 1, which translates as almost sure, not sure or guaranteed. No paradox here.
