I would definitely be either Grand Minimus (that cutscene in R2 where they pass the crown to each other was pretty funny) or a Griskin.
So yeah, I would like to be one of the Teensies from either Rayman 2 or 3 because they're funny.

Estelia. She has the mad brown hair like myself, and she doesn't take any guff from silly sugar skeletons!
Also the red dress strikes a chord with me for some reason. Even as a kid I somehow always identified more with heroes in novels if I pictured them wearing red.
