Here is a tricky question. He is a guardian but he helps Rayman in some way.

Since he drives Rayman in the lava if our hero does not jump at time, I would actually count him as a baddy.

Yes, he is really part of the guardian team, and was only obliged to help because Polokus requested it. (I think)

I don't think the guardians are bad, as you said they have to prevent intruders from getting the masks, bu if the challengers have a pure heart like Rayman, they will be defeated. Polokus id not stupid ^^

Umber doesn't fight Rayman, he helps him.

I thought the same thing happened at the end of the Sanctuary of Stone and Fire in Rayman 2 and Rayman 2 Revolution.

It does, but he is very kind to Rayman at the end, he says "Well, see you again Rayman, old chum" or something. He obviously didn't deliberately make Rayman jump.
