Running on walls, it's probably the most unique power that I don't think I've seen from earlier Rayman games. I also like fist due to the fact that "fist" could also refer to kick, or in the case of Globox, slap.

Flying with the helicopter is my favourite.
I can't get anywhere without that. It feels wrong when not having that ability.
