I think I remember this song playing in the PS1 version of Rayman 2 (I have the PAL version of it).

It's in the R2 N64 soundtrack. 
It's called "Rayman 2 - Level 1 - (P7) At The Sleeping Robotpirates Room.mp3".

Maybe it's only in the PAL version of the N64 version?
BTW, I downloaded the N64 version, and I got five files out of the archive. They were:
Rayman 2 - The Great Escape (E) (M5) [!].z64
Rayman 2 - The Great Escape (E) (M5) [f1] (NTSC).z64
Rayman 2 - The Great Escape (E) (M5) [f2] (NTSC).z64
Rayman 2 - The Great Escape (U) (M5) [!].z64
Rayman 2 - The Great Escape (U) (M5) [t1].z64
Can someone please explain the difference between these? All they five different versions of the game or something?

The ones marked with an [!] are best to play because that symbol means it's a good dump. Ones with a [t] I think mean they have trainers, which are built in some roms and ask whether or not you want to apply cheats [like unlimited life etc], [f] means it's been fixed.

Sometimes there are random region differences.
For example, in the PAL version of Shadow of the Colossus, a squirrel is seen briefly in the ending sequence. Why? Absolutely no reason at all.

I think I remember that Riding The Lava is changed in the European version. (The part when the music gets really creepy and loud is gone)

While we're at it, the first Crash Bandicoot game had some of the music changed for utterly bizarre reasons.
