Yeah, the buttons don't actually change, it's just that it assumes that the key in that position is labelled 'Q' if you're French, and 'A' otherwise. So I pressed Q and Rayman didn't jump, and pressed A and he jumped, same as he had always done for me in English. I was scratching my head until I remembered AZERTY was a thing.

Heh. The first time someone brought me the cheat codes to DOOM, they were off some place that referred to the French version, and I didn't realize why IDDAD didn't work.
