Maybe slightly more significant than the Podocrock...

Riddle 12
Clue 1: This is not a very prominent enemy from Rayman 3
Clue 2: This enemy only appears in a single part of a single level

Damn, I can't remember the name, but my guess is that enemy who throws you rocks in The Bog of Murk.

I remember, they were called muddibogs.

Since that answer's taken, I'll go for the....enemy armaguiddons?

Neither, although the Armaguiddon's would have also work for the following clue. Although I consider them a more prominent enemy.

Riddle 12
Clue 1: This is not a very prominent enemy from Rayman 3
Clue 2: This enemy only appears in a single part of a single level
Clue 3: This enemy cannot be destroyed by Rayman's fist or any of his laser-washing powders

Clue 2: This enemy only appears in a single part of a single level
Clue 3: This enemy cannot be destroyed by Rayman's fist or any of his laser-washing powders

Celoche is more of a singular entity in my eyes.

Riddle 12
Clue 1: This is not a very prominent enemy from Rayman 3
Clue 2: This enemy only appears in a single part of a single level
Clue 3: This enemy cannot be destroyed by Rayman's fist or any of his laser-washing powders
Clue 4: These enemies tend to attack from multiple directions at once
Clue 5: These enemies appear on a radar
