To infinite or over one million for the final unlockable in Legends (indeed, Rayman needs the energy of 1000 Hearts of the World to get over his embarrassment and start walking around naked)! But this is normal, as a debug string in Rayman Legends explains to us, lums can have babies:

A lumschain with 0 lums is not a lumschain... Please, give this chain at least 2 lums so that they can have babies

That's the most sensible conclusion to draw as those also change color and become red on top of their number contradicting that of Rayman 2.
