Block is a defensive move; as the name says, you block the attack. It reduces vitality and posture damage, but not completely. It's a safe move, but it isn't effective because you'd end up with your posture broken, making them easier to kill you.
Deflect, also known as "parry", is another defensive move, but it's more aggressive because you damage your enemy's posture faster, increasing your chances of victory, and it doesn't affect your posture that much.
Let's say the posture is your "stability", and it's measured with a bar. This is probably the most important factor in this game, because a low "stability" makes you more vulnerable to lethal attacks. Depending of the defensive move you use (block/deflect), you'll lose more or less stability. Deflects (parrys) not only doesn't make you lose that much "stability", but also helps you to break the others' "stability". Of course, this move is harder to dominate, so a bad timing means you're a dead man

As you said, I checked the games mentioned in this season. I don't think there's an Electro Man 3D, so...

If you are curious to know which other pair of games was advertising one another - that would be... Rayman Arena and Rayman 3! Strange that no one thought that it's still OK for Rayman to be a subject of questions in the general video game quiz.
In regards to Bonus Question 2. The common thing for all these games is that they have had both native DOS and native Windows versions released. That's why I thought the last question could put someone on the right track, but I agree, it was a difficult question, and was intended as such.

Now, here is some technical debt of questions that were not, or not fully answered.
Dave guessed correctly "Beyond Good and Evil" and "Prince of Persia: The Sands of Time". The other guess - "Splinter Cell + Far Cry" was partially correct, as I believe one of them did advertise the other, but not the other way around.
