There are some unique features for PS1, like the extra MIDI tracks and the FOG!

I feel somewhat affronted by this statement, but I can't say you're wrong. I don't like how they pitch-shifted some of the sound effects in the Saturn version, they sound too high-pitched in comparison to the PS1 version, and I don't like the extended end to the level completion YEAH music, I prefer how PS1 did with it ending with a little *ting* rather than the Saturn's drop which felt excessive.
But minor niggles, what you're saying pretty much trumps that in the grand scheme of things.
EDIT: Also something I didn't realise, in the Saturn version, Rayman's body-parts actually rotate to be in line with inclines, rather than being flat in the PS1 version. I can't explain it very well, but just take a look at footage of someone playing through Allegro Presto on PS1 vs Saturn and you may see what I mean.

Jaguar version used different sound effects from what I recall, so it's not really an apples-to-apples comparison there. For what it's worth, I think the sounds of PS1 trump those too, for instance, I don't think the Hunter laughs at all when he fires his gun in the Jaguar version.

I bought up the Jaguar Version because of the unique sounds and music, which gets shat on way too much. In every review video I see (other than this one by Pimpeaux which I highly recommend you check out) just aimlessly shits on the Jaguar sound like that’s what the whole game. I really like the quirky music to it as opposed to the obvious cinematic masterpiece that is the CD Soundtrack. And dude, I’ve never played the Jag version before but it just looks so smooth and responsive compared to the somewhat clunky PSX/SS/DOS games.
Besides, I think everyone can agree that the DOS version is a total paste pudding. It’s the only game that makes me not feel guilty about ignoring the fact I own it on GOG

I've seen Pimpeaux's video and it actually gave me a greater appreciation for the Jaguar version. To be clear, I'm not saying the Jaguar version is bad, and I don't think anything I've said would even remotely imply that was my thinking. Yes I have a preference for the PS1 version to be clear...it is the version I grew up with, but I have nothing against the Jaguar version, just ultimately I don't have much knowledge of it either since the Jaguar console was a flop.

The DOS version is the only one (except Jaguar) that has the Ray Breakout.
It is the only one that allows you to play with the keyboard and customize controls (unless you use an emulator and play it on a PC lol).
It has awesome cheat codes.
You can back up and restore save states.
Etc.
The PC was just a far more versatile platform than consoles at the time.
