It's the very first mini-game you get...You unlock it when Murphy is flying around holding Rayman right at the beginning.

I've heard some consoles don't have certain minigames. For example, the GC doesn't have Columbo. The 2D minigame is called 2D Madness, if that rings any bells for you.
I think he sounds like he's 10 in R1 ( no, not because of that Jaguar poster, which had R1 beta pics ^^ ), but in R2 he seems much older... 15? He could be 18-20 in R3, in RRR 2 years older, but I don't really consider that as a Rayman game.
Oh, and in Rayman M, a little older than he is in R2...
In R1, Rayman is the same size as the Musician and his wife. They have a baby, who is WAY smaller than Rayman. So he's an adult in all the games. I think he ages at the same rate the games come out.

I tend to agree with you, but I would say a young adult.
Maybe the reason all Limbless we have seen are either Adults or Babies proves that Baby Limbless turn into Adults the same way caterpillars turn into butterflies! With coccoons!
That would explain why we see a Baby, a bunch of Adults, but no Children...
