I played Gold when it came out (it was a while ago
) and I also remember some Pokémon from the second generation, but I haven't played any of the following games. I'd love to battle using only the first generation though

Wobbuffet and Wynaut are considered uber because of their unique ability, and their perfect, though limited movepool. Shadow Tag, his ability means that opponents can not switch out of Wobbuffet. He can then proceed to use Counter or Mirror Coat to annihilate any opponents thanks to his high HP. This almost GUARANTEES that he can get at least 1 kill a game. Alternatively, he can use Encore to make the opponent keep using a certain move that is harmless to one if Wobbuffet's teammates. Then, you switch in the new pokemon and start using set-up moves like Swords Dance and Dragon Dance, which will normally give you the opportunity to sweep their ENTIRE TEAM.
Can you see the problem?
Most legendaries are considered uber because of thei massive stats and/or great movepools. However, the Legendary Trios, Regigigas, Shaymin, Celebi, Phione, Heatran, Jirachi and Cresselia are deemed not to be too powerful due to average stats (most of these are tied with Dragonite, Salamence and Tyranitar) or a crippling ability (Slow Start... Hell, if not for Slaking's truant, he would be uber too).
I'll explain Chomp later.

I'd like that =D I was planning to enter with my team from FireRed. Actually I don't know how good my team is, but I've got some kind of bond with those pokémon.. From what I remember of the original versions, Mewtwo was first and Dragonite was tied with Mew in the second position. I guess it changed a lot with the new versions.

Indeed, a LOT of changes happened. And making the "perfect" team and strategy is nowadays too much hard.

I have devised the perfect team LV100 Infernape holding leftovers
LV100 Garchomp holding dragon plate
LV??? Spiritomb holding a good item
LV??? Swampert holding a sitrus berry
LV??? Scarmony holding steel plate
LV??? Muk holding black sludge

Ok, you need some help with your item choices.
Infernape will never live long enough to make use of leftovers because his defenses suck. Infernape's strengths are speed and both attacking stats. Equip him with a life orb, it gives you a 30% power boost. The 10% health loss sounds bad, but it doesn't matter for infernape very much. That way he'll be hitting much harder with no huge disbenefit.
Skarmory is the opposite case here. A steel plate is useless on Skarmory for two reasons:
1. Skarmory is not an attacker, it's a WALL. It has an amazing defense stat and good type resistances which help it take on most physical attackers, even those with super effective attacks.
2. Skarmory rarely uses steel attacks anyway. In fact, hardly anyone uses steel atatcks, because it's a horrible attacking type. Only steel types use steel attacks for STAB, and then not always.
Since Skarmory is a defensive pokemon, as opposed to Infernape who is an offensive pokemon, Skarmory DOES want Leftovers. Alternatively, if your scared of Magnezone you could try shed shell.
Garchomp isn't too bad, however Life orb is generally superior to Draco Plate because it powers up ALL of his attacks, and by a greater margin than the plates. Yache Berry is a good choice too since Garchomp is extremely weak to Ice, and the berry can protect him from Ice attacks. Choice Scarf and Choice Band are often used as well, but I personally dislike choice items.
Muk's best choice probably is Black Sludge, especially with sticky hold. Unfortunately as far as I know Muk isn't a great pokemon, but I personally have a soft spot for him.
The good item your looking for on Spiritomb is leftovers, who like Skarmory is a defensive pokemon. However, since you already have a physical wall, maybe you should opt for a special wall instead of Spiritomb, such as Blissey.
Swampert is also a big fan of Leftovers. However once again, he is a physical tank (not a wall, tanks hit back harder than walls but otherwise fulfil the same purpose). So that means you've got 3 physical walls/tanks. Your team is likely to be eaten alive by the first special attacker that comes your way.
By the way, swampert makes a great Lead with stealth Rock, so keep that in mind too.
All in all, your team that you've devised is far from perfect.

Well first up I will make them all level 100 then I will do that!
EDIT: my Infernape has 282 health.
In the battle hall he has done 120 battles in a row.
