Rayman 2 is the first game I owned and played through (the first game I played was Doki Doki Panic), and it's still my favorite. Furthermore, Admiral Razorbeard is my second favorite villain ever (Giygas is my number one). I love Rayman 2.
Those spiders that jump out at you in The Canopy used to terrify me, though. Rayman 2 is what caused my extreme arachnophobia.

Ironically, those spiders don't even have eight legs.
Apparently they were going to correct that in Rayman 4 though:

I don't like the Rayman 4 spiders. They should have made them look more like the Rayman 2 spiders.

I would say leave realism for the games that are meant to be realistic. That realistic spider and the cartoony style of the rabbids together just doesn't look right. Rayman shouldn't be in such a gloomy and grey enviorment either.

I still think that it would have been kinda awesome. I still don't like the costumes though D:
Those nightmare black fluffy things in the CoBD were the worst ones though. The variation between beautiful landscapes and dark wastelands is one of the things that would have made this so awesome. When you work on creative stuff like this, it's important to think a little bit different, rather than just sticking to the past. While I agree a change is good once in a while, I think that cartoony made up animals do better than realistic AND real animals in a world like Rayman's, if you get what I mean.
I know the spider from Rayman 2 is also a real animal, and so are the pigs, cows and sheep in RRR (Though I don't really think they count, since I think RRR is too unrelated to the other games). Got the PS1 version of this today and i'm on my first play through, really enjoying it at the moment and i'm not bothered about the old graphics. The perception of depth could be better though. Just beat the first boss and got the first mask. Was very easy. Will give it a rest at the moment else it'll be completed by the end of the day.
